World’s Best Bran Muffins

2 cups whole wheat flour
1½ cups bran
2 tablespoons brown sugar
1/4 teaspoon salt
1 and 1/4 teaspoons baking soda
2 cups buttermilk
1 egg
½ cup dark molasses
2 tablespoons melted butter

Preheat oven to 350 degrees. Combine first five ingredients and mix well. Combine buttermilk, egg, molasses, and butter and add all at once to dry ingredients. Stir just to moisten the flour mixture. Spoon into well-greased muffin cups, filling two-thirds full. Bake for 20 to 25 minutes.

Makes 2 dozen muffins

TIP: Molasses is an excellent source of iron and bran is high in fiber, so this is a great recipe for pregnant women.
