Heart Healthy Muffins

¾ cup rice milk
½ cup maple syrup
1 tablespoon coconut oil
1/3 cup carrot, grated
1/3 cup apple, grated
1/3 cup zucchini, grated
¾ cup whole wheat flour
½ cup wheat bran, wheat germ, or oat flour
¼ cup flax seed, freshly ground
3 teaspoons stevia
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 tablespoon cinnamon
½ cup raisins

Pre-heat oven to 375 degrees. Beat together the first 3 ingredients. Stir in the carrot, apple, and zucchini. In a separate bowl, combine dry ingredients. Stir into milk mixture until moistened, then stir in raisins. Fill muffin cups three-quarters full. Bake for 20 minutes or until done.

Makes 1 dozen muffins
